Cookies and Cream Popsicles

Serves 12
The easiest, most delicious Popsicle you'll ever have.

Prep Time: 3 minutes

Ingredients
  1. One box of Oreo cookies (approximately 24)
  2. 1 quart of vanilla bean ice cream, softened
  3. 1 cup Oreo cookie crumbs
Instructions
  1. Fill your popsicle molds with 1 Tbsp. of softened vanilla ice cream.
  2. Drop one cookie in each mold
  3. Top with an additional Tbsp. of ice cream
  4. Drop in another cookie and fill with remaining ice cream until the entire mold is full (note: I banged mine on the counter a few times in order to get rid of any air pockets/gaps).
  5. Add popsicle sticks and freeze until solid, 4 hours or so.
  6. One frozen, carefully remove each popsicle mold from its mold and roll each in oreo cookie crumbs. Wrap individually in parchment paper and keep in freezer until ready to eat!
Notes
  1. Removing them from the mould proved to be a little tricky. I found the best method was running each one under warm water for a few seconds and then very slowly pulling on the stick. I should also note that these bad boys melt rather quickly, but that just means you can inhale them with no judgement! Woot!

Grape Refresher Popsicles

Serves 8
This great, refreshing, not-too-sweet popsicle only has two ingredients!

Ingredients
  1. 2 cups Pure White Grape Juice
  2. 2 cup Seedless Grapes, sliced
Instructions
  1. Cut grapes into halves or quarters depending on what will best fit into your Popsicle molds.
  2. Pop the grapes in the Popsicle molds, fill with juice, and freeze overnight.
  3. Run the molds under warm water to loosen them. Enjoy!
Notes
  1. Ingredient amounts are only estimates because popsicle molds come in all shapes and sizes. Fill up as many molds as you want with equal parts grapes and juice.

Cantaloupe Popsicles

Ingredients
  • 5 cups diced cantaloupe
  • 5-7 strawberries, sliced
How-To
  1. Add a few pieces of sliced strawberries to your popsicle mold.
  2. Purée the cantaloupe.
  3. Pour the liquid cantaloupe into the popsicle mold.
  4. Add the popsicle sticks.
  5. Freeze for at least 4 hours.
Servings: 10 popsicles

Watermelon and Coconut Popsicle

INGREDIENTS
  • 2 cups chopped watermelon or 1½ cups pureed watermelon
  • ⅓ cup shredded coconut
  • Fresh mint (optional, but I think it would make this recipe awesome!)

INSTRUCTIONS

  1. Add your chopped watermelon slices to a blender. Puree until smooth. Add the shredded coconut and blend a little longer.
  1. Pour the blended mixture into your popsicle molds. Set in the sticks or handles and pop into the freezer. The popsicles will need at least 4 hours minimum, even longer, before they are fully hardened.
  1. Twist popsicles out of mold. If you are having trouble, run the molds under some warm water until you can loosen the popsicles easily.
